Description
Create a nutty flavour and better balance in your cheese
With this nutty-flavour culture containing Lactobacillus helveticus, you can give your cheeses a distinct nutty flavour and a more rounded character. The culture works actively during ripening and helps you achieve a softer and more harmonious flavour profile – especially in cheeses that are aged over time.
Suitable for many types of cheese – including vegan
You can use the culture in a wide range of well-known cheeses such as cheddar, parmesan, romano, provolone and mozzarella, as well as in Nordic hard cheeses such as herregårdsost. It works for both classic dairy cheese and vegan cheese making, which makes it a versatile choice in home production.
Less bitterness and more depth of flavour
Lactobacillus helveticus helps to reduce bitterness that can otherwise develop during ripening. This gives you cheeses with more depth, roundness and balance – even when you are working with longer ageing.
Thermophilic culture with slow, controlled flavour development
The culture thrives best at temperatures above 40 °C, but it also develops flavour at lower temperatures. With cooler ripening, development is slower, so you should often let the cheese age a little longer than standard recipes indicate in order to get the full benefit.
Combine with other cultures as needed
When you want cheeses with holes, it can be a good idea to combine the culture with an eye-formation culture (item no. 1070), which can be bought separately.
Dosage and yield in practice
You need approx. 1 pinch per 5–6 litres of milk.
The jar is enough for at least 100 litres of milk and is therefore very economical to use.
