Description
Active dry yeast – Saccharomyces cerevisiae var. cerevisiae
Lalvin 71B is well suited to light, aromatic wines with distinct fruity notes and can be used for white, rosé and red wines as well as fruit wines. Wines made with this yeast mature relatively quickly.
A special feature of Lalvin 71B is its ability to break down some of the naturally occurring malic acid during fermentation. Approx. 20–40% of the malic acid can be metabolised, which can be an advantage with fruit and grapes that are high in malic acid. The result can be a softer, rounder wine with less pronounced acidity.
